At the bottom of clay qvevri was about 75kg of whole-bunch Chardonnay too, with the intention of bringing extra complexity and a little bit of tannin. \u003c\/p\u003e\n\u003cp\u003eAcidity is kept nice and high, with aromatics springing from the glass, as notes of citrus mingle with white nectarine, topped with a little hint of reduction.
