White Oat Distillery is the brain child of Tudor Duxbury, a near life-long Distiller with an eye for the unique. Duxbury created White Oat out of a passion for home distilling, and that experimental home distilling flare has carried over into the professional product, resulting in some of the most unique (not to mention tastiest!) spirits on the market.
The legend of White Oat states that Duxbury grabbed a bag of white oats from a brewery supply room and thought he'd try to make a gin from it. From there, the experimental ethos of White Oat was born. There's a deep respect for old flavours, but no reticence to add a new flare to them.
If you're curious to sample some of these unique flavours, now's your chance! Wine Republic will be hosting White Oat Distillery tastings this October. Come in to our Northcote store on 24.10.25 or our Fitzroy store on 31.10.25 to try them out and take a bottle home!
Chilli Mango Gin
A summery Gin with the perfect balance of sweet and spicy. The predominant flavour is - perhaps unsurprisingly - fresh, juicy mango, balanced by herbal spice. Coming up from behind is a beautiful, persistent chilli heat which is sure to delight spice lovers. Delicious!

Fiery Southside A Southside recipe with some oomph from White Oat Distillery. Packs a punch of flavour, a real crowd-pleaser cocktail! 60ml Chilli Mango Gin
30ml Fresh lime juice 15ml Agave / simple syrup 5-6 Coriander Leaves Pinch of Cumin Garnish with a Coriander leaf
Shake all the ingredients and double strain.

Berry Pink Gin
Gin the colour of a Queensland sunset. This excellent little spirit carries some delicious sweet strawberry notes, balanced by tart raspberry and a classic hit of juniper. There's also a persistent earthiness that grounds everything (no pun intended). Tastes as good as it looks!

40ml Berry Pink Gin
20ml Violette Liqueur or Syrup 20ml Lemon Juice Barspoon of Luxardo Maraschino Garnish with a Lemon Twist Shake well and double strain.

Emerald Fairy

An homage to Absinthe in both name and colour, but with a completely distinct and delicious flavour. The juicy sweetness of strawberry candy is cut through nicely by tart green apple notes. A perfect summer drink for a sweet tooth!

Appletini
White Oat's tart spin on the classic cocktail of James Bond-fame. Dangerously gulpable!
60ml Emerald Fairy
45ml Apple Juice
30ml Lemon Juice
15ml Simple Syrup
Add all ingredients into a shaker with ice. Shake well, double strain. Garnished with dehydrated apple.

London Dry Gin

A classic Dry Gin, through and through. Not reinventing the wheel here, but putting a delicious, unique spin on it. Blended from 7 different botanicals, this is a beautifully citrusy Gin with some lovely subtle pepperiness throughout. Smooth and elegant, this does well with tonic, in a cocktail, or with whatever else you can think of!

Freezer Martini
A classic cocktail made from a classic-style Gin. White Oat's nod to the traditional flavours at the heart of all their drinks.
360ml London Dry
60ml Dry Vermouth 20ml Filtered Water Garnish olives / Lemon / Citrus Makes 6 Classic Martini’s. Batch the three ingredients in a glass bottle and keep in the freezer for perfect ready made Martini’s. Measure 120ml and garnish. |
Maple Orange Rum
Sweet, warming and delicious. There are hearty wood aromas upon opening, laced with subtle vanilla and caramel. Strong molasses flavours marry with elegant florals, which are then rounded by the woody sweetness that comes from the ex-Bourbon and maple syrup oak casks the Rum was aged in. Unique and moreish.

Mai Tai
A tropical resort classic with a White Oat spin. To be enjoyed on a summer's day!
45 ml Maple Orange Rum
15 ml Cointreau
22.5 ml Lime Juice
30 ml Orgeat Syrup
Barspoon Simple Syrup
15 ml Rum Float (optional)
Garnish: Mint, Lime Wedge
1. Fill a shaker with ice.
2. Add dark rum, Cointreau, lime juice, orgeat syrup, and simple syrup.
3. Shake well and strain into a highball glass filled with ice.
4. If desired, gently pour dark rum on top to create a float.
5. Garnish with fresh mint and a lime wedge.
6. Serve and enjoy.
