Description

After his Ramato-style Pinot Grigio and Ripasso-inspired Cabernet, Ben Gould decided to be inspired by another Tuscan ancient winemaking technique on his Sauvignon Blanc called "Governo All' Uso Toscano"

This technique induces inducing a secondary fermentation by adding a small portion of dried grapes. Here he picks a portion of his grapes early and lets them air dry before letting them wild ferment on skins.

The remaining Sauvignon Blanc grapes are picked later and also given the wild ferment treatment before everything is blended and left on lees for 6+ months.

The final wine is definitely not your average Sauvignon Blanc but a lot more textural and vibrant which will take you back in time to a Tuscan vineyard drinking wine whilst watching the sun go down.
