Description

Melon de Bourgogne (Melon Blanc) grapes cultivated in a completely organic vineyard situated on schist soils. The grapes are harvested at night to preserve freshness, undergo cool maceration on their skins for 12 hours, and experience natural fermentation with no lees aging—an uncommon practice in comparison to most Muscadet Sevre wines.

The resulting wine is characterized by its dry, vibrant, and crisp profile, featuring the typical salinity indicative of the region and concluding with a subtle spritz on the finish.

Domaine de la Combe, nestled in the heart of the Muscadet appellation in Saint-Fiacre village, is where this unique winemaking process unfolds. The grapes are sourced from vines spanning a wide age range, from 4 to 70 years old. Since taking over from his father in 2016, Pierre-Henri has been actively transitioning the vineyard to full organic cultivation. The estate, surrounded by the Sevre river, benefits from a distinctive microclimate, contributing to the wine's exceptional character.
