From organic vineyards in the Margaret River wine region, this wine is a blend of Semillon and Sauvignon blanc. The fruit is hand harvested and fermented on skins for two weeks in open fermenters and in a cement egg fermenter for 8 weeks. The wine is than pressed off to barrel and egg for full malolactic fermentation. After racking a touch of sulphur is added to avoid bottle variation and further oxidation. Bouquet of peach and guava and lemongrass. On the palate is slightly hearty, textural with notes of tart persimmon.
