"Sadly, I can count on one hand how much Australian aligoté comes my way. More should be planted, but that’s another story. Barnaby Flanders gets some and makes a damn fine drink out of it. Therein lies the lesson. Fennel and lemon are dressed with finger lime and juicy tangy acidity, but it’s savoury, too, a little nutty and then there are the texture and lovely florals. It has the right amount of complexity without forfeiting deliciousness."
