Description

Generous, mouth-filling and incredibly complex, the 2015 Vintage Brut is a multi regional blend. 70% Chardonnay and 30% Pinot Noir, sourced from vineyards planted between 1970 and the 1990s across The Huon Valley and Tasman Peninsula.

Disgorged in late 2022 this has had seven years on lees and almost two years under cork before release.

Fruit was hand-picked. Each parcel (three of Chardonnay, one of Pinot Noir) was gently pressed as whole bunches. Juice was cold-settled and carefully racked prior to fermentation in stainless steel. One of the Chardonnay parcels underwent partial malolactic fermentation in old, small format barrels prior to blending.

Seven years on yeast lees, 3 g/L dosage, 12.4 % alcohol, TA 8.55 g/L. Natural cork (Amorim Spark)

Only 1830 bottles produced.

Green and red apple along with citrus and white peach tones with hints of freshly baked pastries, sea spray, crushed stone and oyster shell, brioche, soft spice, washed rind cheese, wildflowers and clover blossom.
