Description

Ancient Stones Shiraz from Jericho Family Wines is their most ambitious effort yet.

It is carefully hand harvested from the top two rows of the oldest Shiraz on the Bracken vineyard. The heads are removed from 6 French oak barrels to crush the Shiraz directly into these vessels for fermentation. Once fermentation is complete, the free run is drained before gently manoeuvring the hoops from the body of the barrels, and carefully slotting the heads back in. At this stage, the barrels are sealed back up for a further 270 days before pressing. This meticulous process, combined with extended aging, results in a fine and elegant wine with a beguiling nose of leather, chinotto, and cascara. Its palate offers a blend of petrichor, slatey minerality, savory passata, and a hint of dried florals. The tannins are expertly resolved, leaving a lasting impression.
