Description

A blend of three varieties, each bringing its own charm to the final product. Riesling was fermented at cool temperatures in order to retain it's aromas, before being sent to a combination of stainless and barriques for ageing. Pinot Gris was treated completely different, with heavy oxidation encouraged, before being moved to 1000L amphora for fermentation. At the bottom of clay qvevri was about 75kg of whole-bunch Chardonnay too, with the intention of bringing extra complexity and a little bit of tannin. 

Acidity is kept nice and high, with aromatics springing from the glass, as notes of citrus mingle with white nectarine, topped with a little hint of reduction. A chalky texture is achieved, bringing a thirst quenching drop that has you coming back for more!
