A blend of Pinot Grigio and Riesling sourced from Dash Farm Vineyards in the Bendigo region of Victoria. Each is left to ripen a little longer in pursuit of fuller phenolic and flavour profiles, to provide the final product with complex layers of perfume and very fine tannins. 

Fruit was entirely de-stemmed, and co-fermented in 3700 litre cement tanks for three weeks. No pumping, no plunging, and finally no pressing took place, with the free-run juice seeing short élevage in used puncheons. 

A stunning colour, moving past amber and into the red spectrum. There are lots of sweet orange and red fruit notes on the nose, with some heightened floral perfume in the mix. The palate delivers a similar profile, with slightly under-ripe red fruit notes coming through, accompanied with citrus.
