Pat’s Nebbiolo pét-nat hails from Willoughby Bridge Vineyard in Colbinabbin. Pat has been making Nebbiolo from this north-south oriented site on fine iron and clay-rich soils for almost 10 years now. The fruit is sourced from one block of vines at the highest point of the vineyard on the property's western edge. The soils are finer and have a higher proportion of rusted iron with more clay than further down the hill. Pat picks for freshness while ensuring ripe flavour and bright acidity are captured at lower potential alcohol. This is a blend of 2021 and 2022, the former held in cask for 12 months before being blended with the latter as fermenting must. The final blend had 16 g/L residual sugar and was bottled in March 2022. After 25 months in bottle on lees, the wine was disgorged by hand. Zero dosage and zero additions. Et voilà!
