Bursting out of the gates of this McLaren Vale winery are Three Dark Horses intent on doing some unusual things to wine.

The Three Dark Horses in this case are winemaker Matt Broomhead, his father Alan and grandfather Frank. Together, this trio of mavericks are turning what you knew of McLaren Vale wines on its head. For a start, this chardy is produced using a process called carbonic maceration - usually saved for red grapes. But the result is surprising. It's slightly cloudy and funky, with an orange hue from the skin contact with the grapes. It's nutty (not nuts!) and savoury - not your average Chardonnay by any means.
