A cool climate Fiano, in fact the coolest expression of Fiano in Unico Zelo's range, where the fruit is grown at about 500m above sea level in the Northern Adelaide Hills. The environment here lends a slower ripening of the grapes due to consistent cooler temperatures during the growing season. As a result, this wine shows a leaner, mineral driven tone, with great tension when young. 

A two day skin contact after picking, then pressed off for wild ferment in tank. It spent a total of 9 months on fine lees with occasional battonage to develop some texture. Lots of grapefruit pith and kaffir lime notes on the nose, and zippy acid on the palate.
