Unico Zelo

Description

The result of years of planning and dreaming from the Unico Zelo team as they worked to produce the very best Fiano they possibly could. The region's distinctive alluvial quartz-shot clay brings crisp minerality and bright aromatics to the party, while the vineyard's altitude brings a lengthier ripening season and bombastic, electric acidity. After 12 months spent on lees in a mix of stainless steel and French oak, the resulting juice is blended, racked, and given another 9 months to mature in stainless steel.

The resulting wine rears its head with a nose of grapefruit pith and jasmine oil that blossoms into layered texture, more-ish acidity, and richer, oaky notes on the palate. Reminiscent of an aged Chablis, with just enough oak to jazz things up without overpowering the strong minerality and acidity.
