Crafted from select vineyards across the Tamar Valley, this vibrant first release was picked at 11–11.5% potential alcohol to capture its beautifully ripe flavours. The first disgorgement of the 2023 vintage—ergo, named as 231—consists of a Pinot Noir dominate blend at 80%, bringing fresh berry brightness, while Chardonnay, having undergone full malolactic conversion, adds texture and depth. Whole bunch pressing and a slow, cool fermentation set the stage for six months of lees maturation before blending. The wine then spent an additional 14 months on lees in bottle, before disgorgement with 6g/L dosage, delivering balance, elegance, and finesse.
